Method

Put the pieces or orange rind into your processor and process until they are just orange specks, or grate it finely.

Put the peel and sugar into a bowl.

Toss the candied peel in half the flour, then put the excess flour and the rest of the flour, baking powder and salt into a mixing bowl.

Break in the eggs, pour in the orange juice and beat until the mixture is smooth, then fold in the orange peel.

Spoons into an 18cm lined cake tine and pop into the oven to bake at 160 deg.C for about 1 ½ hours.

But test it with a skewer or knitting needle after about 1 ¼ hours. Unwrap the cake, pop it into a shallow dish and whilst it’s still hot spoon over it the orange juice and sugar mixture.

Leave cake to cool (it will soak up the syrup) then decorate.
